Description

Hypsizygus Ulmarius, known as the Elm Oyster is relatively rare in nature. A
nutritional powerhouse, like all oyster mushrooms are, it contains phenol,
alkaloids, proteins, tannins and polysaccharides. These compounds might be
responsible for its medicinal properties which are increasingly being studied.

Elm Oysters usually grow individually or in small clusters on elm and beech
trees. It closely resembles other oyster mushrooms, with a shelf like shape that
can become quite large, ranging from 4-15cm. However, it produces larger fruit
bodies that other Oysters and is argued to be better in flavor and texture. It has a
white to light grey or brown fruiting body, depending on the substrate and
environment it is grown in.
